The Long-Awaited Results of the Carrot Cake Throwdown

Wow, my friends. It was oh so very close. But Cake 2 just touched out Cake 1 by a hair! Cake 2 (my beautiful creation!) was the product of a late night slaving over a hot oven! :-) Luckily, I enjoy such things, and I had fun making the pecan glaze to go between my raisin-pecan carrot cake layers, as well as the cream cheese frosting covered in toasted coconut! I wish you could all have had a taste! Our judges did a fantastic job--and I'd say that even if I lost! Tom apparently isn't yet ready to give up, and has accepted the challenge of a second throwdown--Battle Red Velvet Cake. Stay tuned for updates on that in a few weeks!
